All encased in slices of Baker Street’s rich and hearty Rye & Wheat Bread, this Mozzarella & Pesto Toastie is a great Italian inspired turnaround

Juicy tomatoes, melting mozzarella and herby pesto all come together with Baker Street’s Rye & Wheat Bread to create a tasty Mozzarella & Pesto Toastie. Perfect for those days when you want a treat but don’t want to spend ages making it. This recipe also works with any cheese you might have at home, if you can’t get your hands on mozzarella.

To make a vegan alternative

Find a vegan pesto to use instead in this recipe, and make sure you pick a vegan-friendly cheese (or cheeses!) to also pop inside your toastie.


  • 4 slices Baker Street Rye & Wheat Bread
  • 2 tbsp green pesto
  • 125g mozzarella, sliced
  • 1 tomato, sliced
  • Basil leaves


  1. Pre-heat your grill to a medium-high heat.
  2. Spread the pesto onto the slices of Baker Street Rye & Wheat bread, then top with the sliced mozzarella, tomato and a few basil leaves.
  3. Pop the other slices of Rye & Wheat Bread on top.
  4. Pop the toasties under the grill until the rye bread is well toasted and the mozzarella is melting.
  5. Flip the toasties halfway through to ensure they are cooked on both sides.
  6. Remove the toasties from the grill, slice in half and serve with a side salad if you want.
