Caramelised Oranges & Cream Cheese Toasties

A light, sweet and creamy snack or meal, those cream cheese toasties can be enjoyed at any point during the day and a great way to use up some leftovers in the kitchen.

This is a good way to use up the last orange that’s going soft in the fruit bowl, and the last bit of cream cheese or mascarpone in the fridge. It’s also a great way to use the last slice of Baker Street Rye & Wheat Bread if you have any leftover at home instead of throwing it in the bin.

The cream cheese on rye toasties recipe is a great combination for something not too heavy, and the topping is a little like the frosting on a carrot cake – a delicious breakfast, dessert or afternoon snack!

Ingredients

  • 1 slice Baker Street Rye and Wheat Bread 
  • 1-2 tbsp cream cheese or mascarpone  
  • 1 tsp icing sugar 
  • Few drops vanilla extract 
  • 1 large orange 
  • A knob of butter 
  • 1 tsp demerara or caster sugar 
  • A few flaked almonds (optional) 
  • A few mint leaves (optional) 

Steps

  1. Mix the cream cheese or mascarpone with the icing sugar and vanilla extract in a bowl. In a separate bowl, zest the orange using a citrus zester or fine grater and mix half of the zest into the cream cheese or mascarpone.
  2. Peel the orange (or carefully cut off the skin and pith) then cut it into 4-5mm slices. Toast a slice of Baker Street Rye & Wheat Bread.
  3. Melt the butter in a frying pan and add the sugar, then cook for a minute or two until the sugar has dissolved and it’s starting to caramelise.
  4. Add the orange slices and cook for a minute or so on each side.
  5. Spread the sweetened cream cheese over the warm toast then pile the caramelised oranges on top, including all the juices.
  6. Scatter over the rest of the orange zest and the flaked almonds, then add a few mint leaves if you like.
