When summer finally lands, enjoying delicious food with your loved ones outdoors in the sunshine is the perfect way to celebrate the season.

And we think this Summer Berry Bread & Butter Pudding is just the right dish to serve for this time of year.

Using only six slices of our Baker Street Sliced White Loaf, alongside an array of tasty British summer berries, we’ve created this easy summer dessert. For our version of this Summer Berry Bread & Butter Pudding, we’ve used strawberries, raspberries, and blueberries, but you can pick whatever berries you and your family would love to go into this dish. Summer Berry Bread and Butter Pudding Sliced White Loaf

Ingredients

  • 6 slices Baker Street Sliced White Loaf
  • 3 tbsps softened butter
  • 1 tin or carton of custard
  • 4 tbsps milk
  • 250g mixed berries (eg. raspberries, blueberries, blackberries and strawberries)
  • 1 tbsp brown sugar

Steps

  1. Preheat the oven to 160°C fan / 180°C conventional / Gas Mark 4. Lightly butter a medium-sized ovenproof dish.
  2. Mix the custard and milk in a bowl, then warm in a pan over a low to medium heat on the hob, or the microwave, but do not boil it. Lightly butter the slices of bread then cut each slice into 4 triangles.
  3. Scatter a third of the berries into the bottom of the dish, then add a few slices of the bread, laid flat in the dish. Add another third of the berries and pour over half the custard.
  4. Arrange the rest of the bread slices in a pattern then scatter over the remaining berries. Pour over the rest of the custard then sprinkle the brown sugar over the top.
  5. Place the dish on a baking tray and bake in the oven for 20-25 minutes until golden. Spoon into bowls and serve with a little cream if you like.
