Smothered in creamy red pepper houmous and filled with grated carrots, tomatoes, cucumber, baby spinach & avocado, it’s a vegan-friendly lunch idea that will make your sandwich the highlight of your day.

Top Tip

You can add or remove as many of the fillings as you like, plus swap in different veggies or fillings if you prefer.


  • 4 slices Baker Street Sliced Brown Loaf
  • 4 tbsp red pepper houmous
  • Handful baby spinach leaves
  • 2 vine tomatoes, sliced
  • About 20 thin slices of cucumber
  • 1 small carrot, grated
  • 1 avocado, sliced
  • Little lemon or lime juice


  1. Spread each slice of bread with a tablespoon of houmous (can be replaced by any houmous of your choice).
  2. Add the spinach to two slices, followed by the tomato, then the cucumber and carrot
  3. Squeeze a little lemon or lime juice onto the avocado then add the slices to the sandwiches.
  4. Finish with the two remaining slices of bread, houmous sides down
